Earl Grey is one of the most well-known teas today, yet most are unaware of the history behind this alluring brew. There are many versions of the tale of the origins of Earl Grey tea, however all involve the 19th century aristocrat, Charles Earl Grey who later became the Prime Minister of England. Some say this tea was a gift he received for saving the life of a Chinaman, and other accounts tell of a Chinese friend of the Earl blending this tea to offset the taste of minerals in the water at his home in Northumberland, England. The secret to its lingering aroma is the oil from the pear shaped bergamot orange, a fruit mostly known in Italy. The scent of this classical blend will forever keep tea drinkers in wonder of what actually occurred to make Earl Grey tea so meaningful today.

For a light version of this black tea, steep for the minimal amount of time.

For a rich black tea (that can be paired with milk or cream) you may steep for a little longer; the dairy product will help to mute out the bitter taste a little bit and give the brew a creamy taste.

Suitable with white sugar, brown sugar, sweetener, honey, agave, condensed milk and maple syrup.
